Green coffee enters the house. A roast day is entered upon the shipping ledger. An 8oz bag leaves the same shift. Reserve a place on a particular day — we roast that lot, then we ship it. No warehouse inventory. No yesterday's beans.

How the house works
Choose the roast
Light, medium, or dark. Open the calendar for that profile and select the roast day entered upon the shipping manifest.
Claim a bag
Each lot posts how many 8oz bags leave that day. The remaining count is live. When the line clears, the lot is closed.
Roast, then ship
We roast on the booked day and mail across the United States immediately after. Lot date on the bag. Fresh by design.

Manifest Roastery runs on lot dates, not shelf stock. A roast day is a line item: origin, profile, bag count, ship date. You buy into that line — not a generic article sitting in a bin.
The work is deliberate on purpose: small capacity, a clear schedule, roast-and-ship in the same window. Premium coffee in the manner of a trade house — without the theater.
